# Sourdough Discard Pretzel Bites & Beer Cheese Dip

When the battery bank hits 100% before noon, you know it’s time to have some fun in the galley! These sourdough discard soft pretzel bites with beer cheese dip are a favorite on board, and remind us of our favorite dive bar. Perfect for bringing a little shore-side fun to any anchorage.

### Ingredients

#### Sourdough Discard Pretzel Bites

- 2 1/4tsp instant yeast
- 2/3c whole milk
- 2tbs brown sugar
- 1/3c sourdough discard
- 2c all purpose flour
- 1/2tsp salt
- 1tbs salted butter, melted
- Toppings of choice: salt, sesame seeds, everything bagel seasoning

#### Baking Soda Bath

- 2c water
- 2tsp baking soda
- Scale up depending on pot size so you have a reasonable amount

#### Beer Cheese Dip

- 2tbs salted butter
- 2tbs all-purpose flour
- 3/4c whole milk
- 2/3c beer
- 1tsp Worcestershire sauce
- 1tsp dijon mustard
- 1/2tsp garlic powder
- 1/4tsp smoked paprika
- 1/4tsp salt
- 12 slices of Kraft Singles (we call it “plastic cheese” but it melts great into sauces and dips) or 2c freshly grated cheddar cheese

### Method

1. Bloom the yeast: warm the milk, dissolve the brown sugar, stir in instant yeast and let sit for 5-10mins, until frothy.
2. Stir in sourdough discard and melted butter. Mix in flour and salt. Knead the dough for 5-10mins until it is smooth.
3. Divide dough into 5 equal balls, cover with a damp tea towel and let sit for 15mins.
4. Roll each ball into a 16in rope, and cut into “pillows”. Boil in baking soda bath briefly (\~1-2mins) until slightly puffy. Use a slotted spoon to remove from baking soda bath. Sprinkle with toppings while still damp.
5. Arrange on a parchment lined baking sheet, allowing 1in space between each. Bake at 425°F for 12-15 mins or until browned to your liking.

#### While they bake/cool, make your beer cheese dip

1. Melt the butter in a small pot, add the flour and cook the smooth paste for 1min. Slowly whisk in the milk, seasonings and beer. Slowly add the cheese, stirring continuously on low heat until melted into the sauce completely. Taste and adjust seasoning to your liking.
