- Description: Fresh produce is often confiscated when clearing into South Pacific countries. This simple grilled chicken marinade made with pantry staples and served with canned sides has become one of our favorite post-passage meals.

In the South Pacific, it’s pretty common for officials to board your boat when you clear into a new country and remove all fresh produce. That usually leaves you with frozen meats (if properly packaged with traceable origin, no pork) and whatever shelf-stable provisions you’ve stocked up on.

One of our go-to “just cleared in” meals is simple BBQ grilled chicken with canned baked beans and whatever canned vegetables we have. It’s not fancy, but after a long passage, it absolutely hits the spot.

**Easy no-fresh-produce marinade:**

- 1/4 cup soy sauce
- 2 tbsp olive oil
- 2 tbsp brown sugar
- 1 tbsp Worcestershire sauce
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp black pepper
- 1/2 tsp dried oregano

Marinate chicken for 2–8 hours, then grill.

Simple, reliable, and perfect for that first night back on land.
