Simple Sourdough Sandwich Loaf (Bread Machine Recipe Using Sourdough Discard)
Taking only a fraction of the power our electric oven requires, we've been reaching for our bread machine more and more during the prolonged periods of lousy weather we’ve had in French Polynesia. Here is our favorite simple sourdough sandwich loaf recipe, made in the bread machine:

Ingredients
- 1 c sourdough discard
- 1 tbs olive oil
- 3/4 c warm water
- 1 1/2 tsp salt
- 1 1/2 tsp honey
- 3 c bread flour
- 1 tsp instant yeast
Instructions
- Add the sourdough discard, olive oil, honey, salt, and water to a mixing bowl. Stir to combine, then pour into the bread machine pan. Add the flour on top, covering all wet spots to the best of your ability. Then, add the yeast.
- Set your bread machine for a 1.5lb loaf, then select the “French” and “dark” crust settings for a crispy, crusty loaf. Allow the bread machine to combine the wet and dry ingredients, using a spatula to scrape the sides as needed. Depending on the altitude and humidity levels, you may need to add more flour or water. You want the dough to be dry enough not to stick to the edges of the pan but wet enough not to have a noticeable layer of flour on the surface.
- Let your bread machine do the rest. Once done, let the bread cool in the machine with the lid open for 10 minutes. Then, while still warm, transfer to a wire rack to finish cooling—this is when it will crisp up! Once completely cooled, slice and enjoy.
Notes
Generally, bread flour yields chewier bread, ideal for sourdough, but I’ve made this with all-purpose flour many times, and it has always turned out great! Let it cool completely before slicing so it doesn’t go crumbly. Sourdough purists will quickly point out that this recipe uses instant yeast as the leavening agent. Therefore, it is not “real” sourdough, but it sure tastes the same for a fraction of the effort, so I’ll keep making it!
